Beef tagine with vegetables

 Serves 6 persons


  • 900 g stewing beef
  • 5 tbsp olive oil
  • 1 knob salted butter
  • 2 chopped onions
  • 4 cloves of garlic
  • 1 tsp ground ginger
  • 1 tsp cumin
  • 1 tsp saffron
  • 1 tsp chopped parsley
  • 1 tsp chopped coriander
  • 500 g potatoes
  • 400 g carrots
  • 4 tomatoes
  • 300 g turnips
  • Salt
  • Pepper

Preparation method: Cut the meat into small chunks. Peel and chop the onions, dice the turnips, tomatoes and potatoes, julienne the carrots. Gently heat the olive oil and butter in a tagine and, when the butter has melted, add the meat and cook until it is nicely browned. Then lower the heat slightly and add the onions, garlic, ginger, cumin, saffron, coriander and parsley. Finally add the potatoes, carrots, tomatoes and turnips and cover with water. Put the lid on the tagine and cook for 1 hour, seasoning to taste. Stir from time to time, adding more water if required.

Serve straight from the tagine.
